Difficulty: Easy - for beginners


1st bowl
1 cup extra virgin olive oil
1/2 cup apple cider vinegar
1 cup sugar
mix well and set aside

2nd bowl
1 can black beans - Drained
1 can black eyed peas - Drained
1 can white shoepeg corn (11oz) - Drained
1 can sliced or diced jalapenos - I used 4oz diced
1 small jar red pomentos - Diced
4 stalks celery - Diced Small
1/2 sweet onion - Diced


Pour the 1st bowl over 2nd bowl and mix well. Refrigerate for 3 hours or overnight, then drain juices off.
