Peanut butter cookie fans will be thrilled to add this chewy recipe to their repertoire

Preparation time: 3 minutes preparation, 2 hours chilling
Cooking time: 9 to 12 minutes

Serves: 9 dozen

4 cups all-purpose flour
2 teaspoon baking soda
1½ teaspoon baking powder
½ teaspoon salt
¾ cup margarine
¾ cup shortening
1½ cups peanut butter
1½ cups granulated sugar
1½ cups brown sugar
4 large eggs
2 teaspoons vanilla extract


Mix together flour, baking soda, baking powder and salt. Beat together margarine, shortening, peanut butter, granulated sugar and brown sugar at medium speed until light and fluffy. Beat in egg and vanilla. Gradually beat in flour mixture at low speed. Wrap dough in plastic wrap; chill fro 2 hours or overnight. Preheat oven t0 375 degrees. Grease baking sheets. Roll level tablespoons of dough into balls. Place cookies 3” apart, on prepared baking sheets. Using tines of a fork dipped in sugar or flour, lightly pressed a criss-cross pattern onto each cookie. Bake until golden 9 to 12 minutes. Cool cookies on baking sheets for 1 minute. Transfer cookies to a wire rack to cool.
