Uncle Merle's Waffles

This is our favorite waffle recipe, courtesy of my Uncle Merle! The kids absolutely love them, they fill them up and provide a great start to a morning. Make extras and freeze them - better than Eggos!

Ingredients

1 cup whole wheat flour
1 cup oatmeal
¼ cup cornmeal
¼ cup wheat germ
2 TBSP baking powder
½ tsp baking soda
Pinch sea salt
2 cup buttermilk or kefir
½ cup applesauce
3 organic farm fresh eggs
Optional: Try adding cinnamon, nutmeg and/or pure vanilla extract for a change of flavor!

Method

Combine all ingredients and bake in waffle maker. These are very filling and nutritious!
Make or freeze extras for your own freezer waffles – much better than Eggo!
Serving suggestions: top with fresh seasonal fruit, crème freshe, whipped cream, peanut butter or a moderate amount of pure maple syrup.

Tip: Purchase buttermilk , divide into 2 cup amounts, place in labeled freezer bags and freeze. Freeze flat so that they can be easily stacked and stores. That way, you can always have buttermilk on hand for baking purposes! Use the same tip for other dairy products, juices, etc. for items that you may not always have on hand. Works great!
