Sugar-free Carrot Cake

A deliciously moist carrot cake with absolutely no sugar.

Ingredients

4 eggs
2 cups all purpose flour
2 tsp baking powder
2 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 cup Splenda brown sugar
1 1/2 cups Splenda
3 cups grated carrots
4 small jars baby food carrots
1/4 cup cooking oil
1/2 cup raisins (optional)
1 cup chopped walnuts (optional)

Method

Preheat oven to 350 degrees
Spray 2 - 9" cake pans well with butter cooking spray.
Sift together dry ingredients. Add eggs, carrots, baby food, and oil. Mix well. Stir in raisins and nuts. Pour batter into prepared cake pans. Bake at 350 for 25 minutes or until toothpick inserted in center comes out clean. Let cakes cool completely. Frost with sugar-free cream cheese frosting.
