Grandma Mac's Raisin Cookies

Recipe from my Grandma McIlmoyle - a shortbread cookie filled with raisins. Delicious dunked in coffee!

Difficulty: Easy - for beginners


1 cup raisins
1/2 cup water
2 teaspoons lemon juice
1 tablespoon cornstarch
1/2 teaspoon salt

Cookie dough:
1/2 cup shortening
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 cup sugar
2 eggs
2 tablespoons milk
2 cups flour
1 teaspoon baking soda
1 teaspoon (slightly less) lemon rind


Grind/puree the raisins. Cook the raisins, 1/2 cup water, 2 teaspoons lemon juice, 1/2 cup sugar, 1 tablespoon cornstarch and 1/2 teaspoon salt over medium heat, stirring constantly until thick. Let cool while you prepare the cookie dough.

Cream together 1/2 cup shortening, 1/2 teaspoon salt, 1/2 teaspoon nutmeg and 1 cup sugar. Add the 2 eggs (slightly beaten) and the 2 tablespoons of milk to the creamed mixture.

In a separate bowl, combine 2 cups flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda and 1 teaspoon (slightly less) lemon rind. Add this to the creamed mixture and mix well.

Roll dough out on well-floured surface to about 1/8 inch thick. Cut out using a drinking glass, place on greased cookie sheet, put about 1 to 1 1/2 teaspoons of raisin filling in the middle of the cut out circle, place another circle of dough on top.

Bake at 375 degrees for about 10-11 minutes until they are lightly golden brown.
