4 4 oz. boneless, skinless chicken breast
1/2 cup diced onions
1 cup frozen cut corn
1 large green bell pepper, diced
1/2 cup plus 3 Tbsp. divided Mrs. Dash® Southwest Chipotle 10-Minute Marinade
1 tsp. olive oil
4 Tbsp. orange juice
1/2 cup raisins
Place chicken breasts in plastic bag, add 1/2 cup (120mL) Mrs. Dash® Southwest Chipotle 10-Minute Marinade and coat completely. Leave in bag for 10 minutes.
Soak raisins in orange juice for 10 minutes.
Meanwhile, heat olive oil in a heavy skillet over medium heat.
Add onions and sauté until soft,
add corn and diced peppers and cook for five minutes.
Add raisins with orange juice, 3 Tbsp. (45mL) Mrs. Dash® Southwest Chipotle 10-Minute Marinade and stir well.
Cover, and set mixture aside.
Heat grill, place chicken on grill and cook 3 minutes per side. Chicken is cooked when juices run clear.
Top with lots relish and serve
