Vegetable Potato Salad

Basically I used up what ever vegetables I had on hand for a quick meal.

Preparation time: 30 minutes
Cooking time: 10 minutes

Difficulty: Easy - for beginners


4 medium size red potatoes
2 large eggs
1 1/2 cups frozen mixed vegetables
4 green onions, chopped
1 stalk celery, diced
1 tomato
1 small romaine
2-4 Tbsps Italian Salad dressing
1 heaping Tbsp light Mayonnaise
Salt & Pepper to taste


Wash the potatoes and place in microwave for 6 to 10 minutes. You can boil them as well. While the potatoes cook, boil the eggs. When the water comes to a boil, I immediately remove from heat and cover for 10 minutes( DO NOT DRAIN THE WATER. Peel eggs and leave in cold water till ready to add to salad. I then add the frozen vegetables to the hot water which the eggs were cooked in for a minute. Rinse with cold water then drain well. Once potatoes have cooled for 10 minutes or so, peel the skin off if desired. Roughly chopped the potatoes, eggs and add the rest of the vegetables. Add the Italian salad dressing and the mayonnaise and salt & pepper to taste.

Wash and chop the romaine, place on serving plate, add more Italian dressing if desired, then add vegetable potato salad on top of the romaine and add slice tomato wedges.
