Ingredients

3-4 bell peppers
1/2 chicken
15 ozs black beans
2 cups Spanish rice
8oz enchilada sauce
jalepeno & salsa
2 cups of cheese

Method

3-4 bell peppers (color is fine) 1/2 chicken (pre-cooked rotisserie-cooked, picked and shredded) ... 15oz black beans(drained and rinsed) 2 cups spanish rice (cooked) 8 ozs enchilada sauce (hot) JalapeƱo (can or fresh) salsa (habanero, hot, preference) 2 cups cheese (shredded, colby jack pepper jack cheddar) Bake on 350 once stuffed, for 25-30 minutes.
