1 pound haddock fillets
1 tsp salt-free mrs. dash seasoning blend, (your choice)
2 oranges, zested and juiced
3/4 cups panko bread crumbs
1/4 cups grated parmesan cheese
2 tablespoons butter, or buttery spread
1/2 teaspoon dried parsley
1/4 teaspoon ground thyme
1. Arrange fillets in large baking dish. Season with Mrs. Dash. Pour orange juice over fish and cover with plastic wrap. Reserve orange zest. Marinate in frige at least 2 hours.
2. Preheat oven to 425 degrees F.
3. Stir panko crumbs, parmesan cheese, butter, parsley, thyme, and zest in a bowl until well mixed. Press crumb mixture over haddock.
4. Bake in oven until fish is easily flaked and topping is golden brown 20- 25 minutes. Allow fish to rest 5 minutes before serving...
