2 tablespoons Dijon mustard
2 tablespoons frozen ( thawed) pineapple juice concentrate
1 clove garlic, minced
1 teaspoon dried rosemary
1/4 teaspoon salt
1/8 teaspoon pepper
2 boneless skinless chicken breasts
1 teaspoon olive oil
2 slices pineapple rings
1. Saute chicken in oil in skillet over medium heat until browned on both sides.
2. preaheat oven to 400 degrees F.
3. In small bowl mix mustard, pineapple juice, garlic, rosemary, salt, and pepper.
4. Place browned chicken into baking dish. Place pineapple rings onto chicken; evenly cover chicken with mustard mixture. Bake in oven for 20 minutes, let stand 5 minutes before serving
