Beer braised turkey tostadas (Tostadas de pavo)

Ingredients

1 tbsp Olive oil
4 tbsp Mölli Acapulco Cooking Paste
1 tbsp Oregano
1 12-ounce dark beer such as Negra Modelo
1 cup Water
2 lbs Turkey thighs or drumsticks, bone-in, skin and fat removed
12 Corn tostadas
1 Avocado, sliced
1 cup Refried black beans
½ cup Queso fresco, shredded
Salt and pepper to taste

Method

• In a large cast-iron casserole, heat the olive oil. Season the turkey with salt and pepper and cook over moderately high heat until browned all over, about 6 minutes.
• Add the Acapulco Cooking Paste, oregano and cook for about 1 more minute. Add the beer and water and bring to a boil. Cover and simmer over low heat, turning once, until the turkey is tender, about 1 hour. Transfer the turkey to a plate and let cool. Boil the sauce over high heat until reduced to 1/4 cup, about 12 minutes.
• Remove the turkey meat, shred it and return to pot with the sauce. Season with salt and pepper to taste. Serve with tostadas, beans and cheese on the side. Enjoy!
