1 tbsp Olive oil
4 tbsp Mölli Acapulco Cooking Paste
1 tbsp Oregano
2 lbs Turkey thighs or drumsticks, bone-in, skin and fat removed
1 12-ounce dark beer such as Negra Modelo
1 cup Water
12 Corn or flour tortillas
2 tbsp Cilantro leaves, chopped
1 Jalapeno, stemmed, seeded and chopped
½ Onion, finely chopped
Salt and pepper to taste
â€¢ In a large cast-iron casserole, heat the olive oil. Season the turkey with salt and pepper and cook over moderately high heat until browned all over, about 6 minutes.
â€¢ Add the Acapulco Cooking Paste, oregano and cook for about 1 more minute. Add the beer and water and bring to a boil. Cover and simmer over low heat, turning once, until the turkey thighs are tender, about 1 hour. Transfer the turkey to a plate and let cool. Boil the sauce over high heat until reduced to 1/4 cup, about 12 minutes.
â€¢ Remove the turkey meat, shred it and return to pot with the sauce. Season with salt and pepper to taste. Serve with the diced jalapeno, chopped onions and tortillas on the side. Enjoy!
