Sunburst Stir Fry

A delicious mix of peppers, pineapple, chicken, and pasta.

1 - 20 oz can chunk pineapple in juice
2 Boneless chicken breast
2 large cloves of garlic, pressed
2 Tbsp minced ginger or 1 tsp dry ginger
2 Tbsp olive or sesame seed oil (or your choice of oil)
2 med carrots, sliced
1 green pepper, seeded and slivered
4 - oz thin spaghetti, cooked and drained
3 green onions, chunked

1/3 cup reserved pineapple juice
1/3 cup soy sauce
1 Tbsp corn starch
1 tsp sesame oil (or olive oil)


Drain pineapple, reserving 1/3 cup juice for sauce. Cut chicken into chunks. In a large skillet, stir fry chicken with garlic & ginger in oil for 2 minutes. Add pineapple, carrots, & bell pepper. Cover and steam 2-3 minutes, until vegetables are tender crisp. Stir in cooked spaghetti. In a small bowl, combine sauce ingredients. Pour into skillet along with green onions. Toss and stir until all ingredients are mixed and heated through.
