French-fried Cauliflower

1 head cauliflower, cut into floweretes
3 eggs, beaten
1 sleeve Ritz crackers, crushed
oil for deep frying


Dip cauliflower into eggs, coat with cracker crumbs. Pour oil to a depth of 1/2 inch in a heavy skillet. Heat oil to 375 degrees. Fry cauliflower in batches, 3 minutes or until golden brown. Drain on paper towels.
