Apricot Oatmeal Soy Cookies

Ingredients

1. 1 cup butter
2. 1 cup maple syrup or brown sugar
3. ½ cup sugar

1. 2 large eggs (or ¼ c applesauce and one egg)
2. 1¼ cup flour
3. ½ cup soy flour
4. 1 teaspoon baking soda
5. 1 teaspoon cinnamon
6. 1 teaspoon almond extract
7. ½ teaspoon salt

Remaining Ingredients:

1. 1 ½ cup oatmeal
2. 1 ½ cup TVP texturized soy protein (gives it a crunch)
3. 1 cup chopped dried apricots
4. ¾ cup dried cranberries
5. ¾ cup unsweetened coconut
6. ¾ cup chopped almonds

Method

1. Preheat oven to 350°
2. Mix butter and sugars until creamy
3. Add next 7 ingredient and mix until just blended
4. Stir in remaining ingredients
5. Drop by tablespoons, 2 inches apart, on ungreased cookie sheet
6. Bake 14-15 minutes or until tops are lightly golden brown. Cool.
