2 large rammekins or gratin dishes
6 tablespoons of cream
2 tablespoons parmesan cheese
1 green pepper
1 red pepper
10cm of chorizo, thinly sliced
4 ripe tomatoes - medium to large size
1/2 cup white wine vinegar
salt and pepper
1. Chop all your veggies- the bell peppers in slices, the onion in thin slices, the tomato in 1cm rings, and the chorizo in thin slices.
2. Fry the onion with the chorizo in a bit of oil. Add the other veggies and stir fry. when they are a bit cooked, add the vinegar. Cook untill you are left with about 1-2 cups of juice in the bottom of the pot. Cooking time should be 15min at full heat.
3. Put these 3/4 to the top into large rammekins. Crack two eggs over the top of each, being careful not to break the yolk. Drizzle three tbsp of cream over each one- just enough to cover everything lightly. Sprinkle with parmesan cheese and put in the oven until its just set, and the cream has browned a little.
Serve with toast and garlic mushrooms!
