Difficulty: Easy - for beginners
Dietary guidance: v
2 cups quick oats
2 cups buttermilk
2 tablespoons honey
2 tablespoons coconut or canola oil
1/4 cup all purpose flour
1/4 cup whole wheat flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
The night before, combine the oats and buttermilk and place in the refrigerator overnight.
In the morning mix together the eggs, honey and oil. Sift together the flours, baking powder, baking soda, salt and cinnamon and add to the wet ingredients. Mix well. Then stir through the oats mixture.
I like to add chocolate chips or chopped pecans to my mixture.
Cook like you would regular pancakes, using approximately 1/4 cup of batter at a time. When they are ready to flip, ease the spatula under gently. They are not hard to flip, but take a little more attention that regular full flour pancakes.
Serve with maple syrup, apple sauce or whatever else takes your fancy.
