Ingredients

Slice fresh tomatoes.
Some fresh homemade Marinara Sauce.
Salt Pepper
Garlic
Olive Oil
2 beaten Egg Whites
Panko Bread Crumbs
Slice fresh tomatoes.

Method

Dip sliced Eggplant in egg whites.
Dust with crumbs.
Heat oven to 325 degrees and Start Layering.(I used Feta Cheese, but feel free to use any low fat Cheese.I love when the Feta gets soft and creamy.)
Brush your baking Dish with Olive oil ,
Start with Eggplant ,Sauce,Cheese.Tomato.more cheese.Your last layer should be Tomato and then cheese.
Bake till Bubbly about 45 minutes.
Use fresh Basil it gives this dish great flavor. Yummy.and healthy. Not to be confused with Eggplant Parmesan.
