Chipotle Chili

Difficulty: Easy - for beginners


1 lb hot italian sausage
1 lb ground chicken or turkey
5 T chili powder
1 T ground cumin
1 tsp ground coriander
2 cloves garlic, minced
1 large onion, diced
1 small can diced green chilis
1 28 oz can diced tomatoes
1 15 oz can tomato sauce
1 14 oz can kidney beans
2 tsp minced chipotle peppers in adobo sauce
1 tsp salt
ground black pepper
1 6oz can tomato paste


Remove sausage from casing and brown the meat. Drain off most of the fat and remove meat from pan. Brown the onion until soft then add the garlic. Add chili powder, cumin and coriander and stir for a minute. Add back the meat, then the tomatoes, tomato sauce, kidney beans, chipotle peppers, salt and pepper. Bring to simmer and cook on low for an hour or more. Stir in tomato paste and let cook until it thickens.
