Pork Rib Roast

Roasted Pork Ribs - French Cut

Cooking time: 2hrs

Serves: 6-7


2 lb frenched pork rib roast
2 tbsp crushed rosemary
1 tbsp crushed black/red peppercorns
3 tbsp mustard
3 garlic cloves
1 tbsp olive oil
1 cup white wine
2 tbsp flour


Heat olive oil in pan and add roast, sear on all sides and set aside
Cut small holes in roast and insert garlic
Mix mustard, rosemary and black pepper - coat roast in paste
Place roast in baking pan and cover - cook at 375 for 20min/lb

Sauce - remove roast and place on plate - tent and let rest for 10-15 min
Add white wine to pan and place on stove top - on high
Let boil and reduce, stirring and scraping bottom of pan
Thicken with flour and water mixture, boil to reduce further

Slice pork between ribs, top with sauce....voila!
