Chorizo spaghetti

3 chorizo sausages, sliced
1/2 large red onion, chopped
2 cloves garlic, chopped
3 tomatoes, chopped
juice from 2 limes
1/3 cup tequila
whole wheat pasta
cilantro to taste
salt to taste


Chop ingredients, set aside. Cook pasta according to directions. Meanwhile, brown the chorizo in a non-stick pan (don't add oil), about 5 mins. Don't overcook, it burns easily. Add onions and garlic, cook until softened, about 3 mins. Add tequila to taste, and tomatoes, cook briefly. Add cilantro and salt to taste. Add lime juice, stir well. Drain pasta, toss all ingredients together and serve. (All ingredients can be increased or decreased to taste.)
