Beef fajitas

Serves: 4


1/2 lb stir fry beef strips (or a steak cut into stir fry size pieces)
1 red pepper, cut into strips
1 yellow pepper, cut into strips
1/2 onion, chopped coarsely
1/2 cup mushrooms, chopped
1 cup canned black beans, rinsed
1/2 cup salsa
juice from 1 lime
1 tbsp cumin
1 tbsp chili powder
1/2 cup cilantro x 2
Fajita shells
salt and pepper to taste


Toss beef in lime juice, cumin, chili powder, cilantro, allow to sit up to half an hour. Prepare veggies. Brown beef in a non-stick pan (no oil needed), remove when browned. Add veggies to pan, cook until softened. Add salsa and black beans, stir well and heat thoroughly. Meanwhile, heat fajita shells at about 350 for about 5-7 mins. Return beef to pan, heat through. Serve with grated cheese, sour cream, salsa and rice.
