Broccoli & Cranberry Salad

Serves: 6-8



1 head broccoli - cut into small florets
1/8 - 1/4 pack cranberries - * I prefer craisins - cut in half or whole
1/4 red onion - finely diced
Cherry tomatoes - amount to suit you
2 - 3 bacon rashers - cooked and diced

Dressing :
1 tbsp lite sour cream
1 tbsp whole egg mayonnaise
1 tspn brown sugar
Small splash of balsamic vinegar - to taste


Salad - mix together all the salad ingredients in a bowl

Dressing: Mix the sour cream, mayonnaise and sugar together. Add the small amount of balsamic - to taste (only a very small amount so less than 1/2 tsp) and add to the above ingredients.

This is lovely fresh or even nice the next day. Great to make up a double batch, use one for dinner and the lunch the following day.
