Mom's Chili

An old recipe I've been using and perfecting for 24 years. Really good, classic chili, with red wine. Omit wine, or use beer if you like. Changes the flavor though.

Preparation time: 20 min
Cooking time: 1 hours to simmer

Difficulty: Easy - for beginners
Serves: 4


1 lb ground turkey
1 lg can whole peeled tomatoes, mostly drained (reserve some liquid)
1 can tomato paste
1 can kidney beans, drained
1 green bell pepper, diced
1/2 a lg Vidalia onion (or 1 med. yellow onion), diced
Shredded cheddar or parmesan cheese to top each serving of chili
1/2 cup red wine-- whatever you have
2 Tbs. chili powder
1 Tbs. ground cumin
3 diced garlic cloves
salt and pepper to taste (about 1 tsp salt, 1/2 tsp pepper)


In a large pot, brown and crumble the turkey. Add onion and pepper while it's browning. Add all other ingredients and simmer for about an hour or more. If the chili is too thick, you can add back some of the tomato juice from the can, or a little more wine. I like the chili as is/thick. Top each serving with shredded cheese. (We like cheddar.)

makes 4 servings. Serve with corn bread or Italian bread
