Doug's "jerk" style chicken breasts

I used Jalapeno instead of scotch bonnet peppers, it was tasty. Hotter scotch bonnet peppers might be nice.

Difficulty: Easy - for beginners
Serves: 6


1 medium onion
juice and pulp from 2 limes
4 cloves garlic
1 ounce of fresh ginger
1 jalepeno (with seeds)
2 ounces vegetable oil
1 tbsp fresh oregano
1 tbsp fresh thyme leaves
1 tbsp fresh sage
1/2 tsp allspice
12 grinds of sea salt

6 chicken breasts


Into a blender put: peeled roughly chopped onion, garlic and ginger, thyme oregano and sage leaves, limes juice and pulp, oil, jalapeno pepper, allspice and salt. Blend until smooth (adding more oil if required) and pour into large freezer bag. Put chicken breasts into bag and marinate for at least 30 minutes.

Heat oven to 375 F.

Put chicken breasts on baking sheet. Put remaining marinade into saucepan and simmer on low while the chicken cooks. Cook breasts to an internal temperature of 170 F.
