Difficulty: Easy - for beginners
2 cups shredded zucchini
1 ½ cups diced onion
1 cup sliced carrots
1 cup diced celery
1 ½ teaspoons oregano
1 ½ cups diced tomato, fresh or canned
1 tablespoon prepared pesto
½ pound diced boneless skinless chicken
6 cups chicken stock
Salt and pepper to taste
1. Combine all the ingredients in the slow cooker.
2. Cover and cook for 8 hours on the LOW slow cooking setting.
3. When done, stir in 2 cups cooked rice or 2 cups cooked noodles if desired.
