grilled pizza

Grilling makes the crust nice nad crispy on the outside but still really chewyon the inside so it is the best of both worlds!

3 large bell peppers
1 T minced fresh oregano
1 T olive oil
3/4 t salt
3 c. thinly sliced onion
1/4 t. sugar
7 oz. shiitake mushrooms
1 (10 oz) can refrigerated pizza dough
1 T cornmeal
cooking spray
2/3 c. crumbled goat cheese
1 T freshlly chopped parsley
fresh ground pepper


1. Preheat broiler
2. cut bell peppers in half and discardseeds. Place sin side u on a foil - covered cooking sheet. Broil 15 minutes or until blackened. Then place in zip-lock bag for 15 minutes. Peel the pepers and and cut into 1/2 in. strips. Combine with oregano 1 t olive oil and 1/4 t. salt
3. heat 1 t oil in skillet over medium heat. Add onion and 1/4 t salt cook 15 minutes then invrease heat to medium-high. Sprinkle onons with sugar and sautee 5 minutes.
Heat 1 t of oil in another pan over medium high heat. Ass mushrooms, cover and cook 2 minutes. Uncover and cook until tender. combine onions and mushrooms with 1/4 t salt.
4. prepare grill.
5 Roll dough into a 12 in circle an sprinkle with cornmeal. Place dough on grill coated with cooking spray. grill 3 minutes or until nice grill marks appear. Turn over and spread pepper mixture and onion mixture on top and top wth cheese. Work quickly so that the crust does not get burned. cover and grill another 3 minutes. You can use any topping you like if these ones don't appetize you and its easier to flip the pizza with help from someone else so that it doesn't get crazy looking
