My Mum's Granola

This is a delicious granola that I remember my mum making frequently when I was a kid. It is honestly the best granola I have had.

Ingredients

1/2 - 1 c. shredded coconut
4 c. rolled oats (or oat/spelt flake combo)
1 c. sunflower seeds
1 c. wheat germ
1/4 - 1/2 c. sesame seeds
1 c. chopped raw almonds (or almonds and pumpkin seeds)
1 c. honey (or honey and agave syrup; reduce amount if using part or all agave syrup)
1/2 c. oil
1 tbsp. cinnamon

Method

Preheat the oven to 325 F. Mix everything *except* the honey, oil, and cinnamon in a large bowl.

Bring the honey, oil, and cinnamon to a boil. Pour this mixture over the dry ingredients and mix thoroughly. Spread on 2 greased cookie sheets.

Bake granola between 20-30 minutes, stirring often. Watch closely at the end to prevent it from burning.

Allow to cool undistrubted, then break into chunks.
