Buttermilk Rusks...

Difficulty: Easy - for beginners


250g sugar
2 eggs
500ml buttermilk
1kg self raising flour
250g margarine or butter


Beat sugar and eggs together well
Add buttermilk
Rub margarine/butter into flour and mix into wet ingredients

make small balls...(golfball sizea) and place into a greased baking tray...
make sure the balls are all touching eachother.

Bake at 180 degrees for 50 minutes.
Once baked break the balls apart and put onto an oven rack and dry in a warm oven 100 gegrees for a couple of hours.

Cool completely and store in an air-tight container.

For a differnt flavour add a tablespoon of aniseed into the dry ingredients before combining.
