Difficulty: Easy - for beginners
1- ripe bitter gourd
3-4 lady-finger (oracle)
1/2 yellow onion (diced)
3-4 garlic bulbs divided (diced)
1/2 cup plain yogurt (Aska thick)
1 tbsp black sesame seeds. (zoelife)
2-tbsp of garlic powder.
1-tbsp chili paste
1-tbsp curry powder
1-Scotch Bonnet chilies chopped fined (seedless)
salt and pepper
1/3 cup oil oil for frying.
1/4 cup water.
2-tbsp caster sugar.
Heat oil for frying in a wonk and add garlic and small chilies until fragrant. Sprinkled garlic powder over chopped veggies and combine with a spoon. Remove garlic to a paper towel soon as it turns brown. Add the onions and stir fry until soft. Add the lady-finger and the bitter gourd. Add curry powder, and Chile paste then String for a few minutes until well combined. Sprinkle on the sesame seeds and add the water. Cover with a lid until soft. (5-min). Add the yogurt and sugar to sweeten. Stir with a spoon and place on serving plate. Sprinkle fried garlic/chilies on-top to garnish. Season to taste. Server hot.
