Spicy Tomato Bread Soup

Tomatoes, fresh or tinned. Good for using up tomatoes.
Thick slice of stale bread, or fresh if you don't have stale
Ground cinnamon
Ground ginger
Ground cumin
Fresh coriander
Small glug of oil
1 chopped onion
Runny honey


Sautee your onion and spices in the oil. Chop up your fresh tomatoes and bread or open your canned tomatoes. Tip in when onions are soft, add the honey to taste. Continue cooking until everything is soft. Blitz with a blender with some fresh coriander. I sieve back into the pan to catch all the tomato skins. Serve with chopped coriander on top.

I freeze it, and sometimes use garlic too. You can freshen the taste with a squeeze of lime. Or use fresh ginger if you're out of ground. No quantities, use the ingredients to balance the taste the way you like it. Half a teaspoon of each spice, a dozen medium toms, a tablespoon of honey and 2 slices of thin, shop bought bread, works, if you want a starting point.
