Difficulty: Easy - for beginners
200g Caster Sugar
250ml Fresh lemon Juice
3 Lemons zested
100g Unsalted Butter
1.In a microwave safe bowl, whisk together the caster sugar and eggs till smooth. Stir in the lemon juice, lemon zest and butter.
2.Cook in the microwave for 1 minute intervals, stirring after each minute until the muixture is thick enough to coat the back of a metal spoon.
3.Remove from microwave and pour into small sterilized jam jars.
Store for up to three weeks in the fridge.
(Never had this problem in my house)
