Broccoli Salad

A very hearty addition to a meal.

2 bunches raw broccoli, cut into small pieces
1 lb. bacon
1/2 cup red onion, chopped
1/2 cup toasted, salted sunflower seeds
1/2 cup shredded cheddar cheese

1 cup mayonaise (low-fat works also)
2 tbsp. vinegar
1/4 cup sugar


Cook the bacon. Drain on paper towels and cool.
In large bowl, crumble bacon. Add remaining ingredients.
Whisk dressing together in small bowl.
Pour dressing over salad, half at a time and fold together with a rubber spatula (to the desired amount). Refrigerate.

*Options: add 1 cup red seedless grapes, halved, or 1/2 cup raisins or dried cranberries.
