Difficulty: Easy - for beginners
2/3 cup soft butter
1 cup brown sugar
2 1/2 cups flour
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp almond extract
1 to 1/2 cups green and red glazed cherries
Mix butter, sugar, egg & almond extract in a lrg bowl.
Mix flour, soda and salt in another bowl.
Fold flour mixture into cream mixture till blended then fold in cherries.
Roll dough into one long round roll or two smaller round rolls. Wrap in waxed paper and refrigerate till firm.
Preheat oven to 325. Lightly grease cookie sheets. Cut dough logs into round slices and lay out on prepared cookie sheets.
Bake for 8 to 10 mins until delicately browned. Cool.
* If you wish you can add a nut of your choice to the mixture before refrigerating. Walnuts, pecans, almonds etc about 1/2 cup
