Toum (Garlic Sauce)

That yummy, yummy garlic sauce you get at Greek and Middle Eastern restaurants.

1 Bulb - Garlic
1 t - Table Salt
2 T - Lemon Juice
2 T - Cold Water
1T - Mayonnaise
1.5 C - Grapeseed Oil
1 t - Sumac [Optional]
1 T - Instant Potato Flakes [Optional]


Combine Garlic, Salt, Lemon Juice, and Cold Water in a deep container and puree with an immersion blender. Add Mayonnaise, Grapeseed Oil, and Sumac. Blend from the bottom pulling up as it emulsifies. If you like it thicker, you can add instant potato flakes. Garlic will be spicy the first day. Flavor mellows the following day.
