vegan oatmeal-banana-maple muffins

i made up this recipe as a yummy way to lower cholesterol in the morning.

1 cup whole wheat flour
1 cup oatmeal flakes
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
2 tablespoons ground flax
1/3 cup maple syrup
1 large banana
1/2 cup chopped walnuts
1 teaspoon vanilla
1/4 cup canola oil
1/2 cup soy milk


1. preheat oven to 350. grease muffin pan or line pan with muffin cups.

2. mix all dry ingredients in a large bowl.

3. mash the banana. mix in all other wet ingredients.

4. add wet mixture to dry mixture. stir until moist.

5. pour mix into muffin pan. bake for 25 to 30 minutes.
