3 breadsticks (about 6 - 8 inches long), or a French baguette
1 TB butter
2 TB olive oil
seasonings of choice -- I like Jane's Krazy Salt
Cut breadsticks into 1/2 inch rounds (or if using larger baguette, cut into 1 inch squares
Melt butter with olive oil in large skillet until just starting to foam.
Place sliced bread face down in the butter mixture in t he pan and allow to cook for 2 - 3 minutes. Season while they are browning. When croutons are just starting to toast/brown, turn them over and brown the opposite side for an additional 2 minutes or so.
I have found that seasoning only one side of the bread is sufficient.
These taste a lot like the bread on a grilled cheese sandwich, and are amazing on a bowl of split pea soup or on a salad.
