Yummy Non-Dairy Whole Wheat Banana Bread

Moist yummy banana bread that can be made with or without dairy, nuts or chocolate chips, white sugar!

Preparation time: 1 hr 10 min
Cooking time: 55-65 minutes

Difficulty: Easy - for beginners
Serves: 8

1/3 cp melted coconut oil ( or butter or half butter & half coconut)
1/2 cp honey
2 eggs, beaten
1 cp mashed ripe bananas (about 3 medium)
tsp vanilla

1/2 tsp salt
1/2 tsp cinnamon

1 3/4 cp soft whole wheat flour (aka pastry flour)

tsp baking soda in 1/4 cp hot water


1.In large bowl, beat (or whisk well) the first 5 wet ingredients
2.Add salt and cinnamon and whisk in well
3.STIR in wheat flour just until all ingredients are wet
(not a smooth batter)

(optional - can add 1/2 cp semi-sweet choc chips or chopped
nuts, if desired, at this point.)

4.Quickly mix the water/soda mixture into batter so it is well
distributed though out the batter.
5. Pour into greased pan and bake 55-65 minutes.
Check that a toothpick comes out clean to make sure it is done.

Cool in loaf pan 5 minutes before turning out to cool on a wire
rack or parchment.

Slice and ENJOY!!

( Easiest to cut after 20 minutes of cooling but I can never wait!)
