Papaya Salad

Saaraketha organic papayas are best eaten fresh, ripe and raw. The following recipe is for papaya that is not too ripe but is firm and is turning slightly yellow.

Ingredients

Ingredients
250 g (3 cups) papaya, cubed into ½ inch pieces
250 g (2 cups) cucumber, peeled, de-seeded, and cubed into ½ inch pieces
¼ cup red onion, finely chopped
¼ cup coriander, chopped
¼ cup spring onion, thinly chopped
1 tablespoon extra virgin olive oil
Juice from 1 lime
Salt and pepper to taste

Method

Toss all of the ingredients together and enjoy.
