An interesting combination of chicken and sausage served over curry rice.

Ingredients

Italian Curry

1 pkg Italian Sausage, sliced ½â€
6 Chicken Breasts, ¾â€ dice
1 lg sweet onion, rough chop
1 red pepper, medium dice
1 28oz can petite diced tomatoes
2 cups chopped kale
1 can black olives
2 14oz cans of chicken broth
½ tbsp. oregano
½ tbsp. thyme
½ tbsp. garlic powder or 1tbsp fresh chopped garlic
Salt and pepper everywhere


Curry Rice
1.5 cups basmati rice
3 cups water
2 tsp curry
2 tbsp EVOO
1 chicken bouillon cube


Method

For Rice:
Heat 1-2 qt pot and add in EVOO, stir in rice to coat. Add in water, curry powder and bouillon and bring to boil. Cover and simmer for 30-45mins.

For Main Dish:
Brown sausage in olive oil and put in bowl. Brown chicken in olive oil and add to bowl. Soften onions and peppers in oil. Add tomatoes, olives, kale, broth, seasonings and meat back into pan and simmer for 45 mins.
