Mincemeat Bran Muffins

Ingredients

Wet Ingredients:
2 large eggs
3/4 cup cooking oil
3/4 cup white granulated sugar
1/4 cup molasses or 1/4 cup packed brown sugar
2 cups milk
1 1/2 cups sweet mincemeat
1 1/4 cups natural bran
Mix together and let stand for 10 minutes.

Dry Ingredients: Blend together
2 1/4 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt




Method

After Wet ingredients have sat for 10 minutes. Add the blended dry ingredients to the wet mixture. Mix all together, being careful not to overly mix the batter.

Fill greased or paper lined muffin tins 3/4 full. Bake at 375F oven for 18 to 20 minutes.

Uncooked batter can be kept in the fridge for one week.
