Mediterranean Roasted Vegetables Soup

1tbsp olive oil
5cloves garlic
4pcs potato, cut into chunks
1pc green bell pepper, seeded and cut into squares
1pc yellow bell pepper, seeded and cut into squares
1pc onion, cut into chunks
1 1/2cup carrot juice
8pcs tomato, seeded and diced
2stalks celery, cut into chunks
broccoli, cut into chunks
3/4tsp salt
pinch of oregano


1. In a roasting pan, combine oil and garlic and roast until oil begins to sizzle about 5 mins.
2. Add potatoes, bell peppers and toss to coat. Roast until potatoes begin to soften. About 25 mins.
3. Add onion, carrot juice, tomatoes, celery, broccoli and salt. Bring it to boil over medium heat. Add the roasted vegetables.
4. Cook until heated through.
