Difficulty: Easy - for beginners
2 large sweet onions
4 slices thick-cut bacon
4 center-cut pork loin chops
1 tablespoon Brown Ssugar Bourbon Marinade (dry mix)
1 tablespoon canola oil
1/2 cup dry sherry
Cut onions and bacon into large non-stick 2-inch chunks. Preheat large saute pan on medium-high2 to 3 minutes. Place marinade mix in clear bag. Add pork chops and shake. Set aside. Place oil in pan. Remove chops from bag and place in skillet and cook 6 - 8 minutes, turning occasionally. Remove chops from pan and place onions and bacon in pan. Stir 7 to 8 minutes or util bacon is crisp and onions are tender. Stir in remaining marinade mix. Reduce heat to medium. Add sherry and pork chops. cook 2 to 3 minutes until liquid is reduced by about 2/3. Serve.
