Chili Con Carne

2 tsp Cumin Seeds
2 tsp Coriander Seeds
1 Cinnamon Stick
Salt & Pepper
1 Beef Oxo Cube
1 to 2 tsp Chilli Flakes (or fresh red chili)
1 to 2 Glasses of Red Wine
Splash of Worcester Sauce
2 to 3 Red Onions
1 Tin of Chopped Tomatoes
1 Tin Red Kidney Beans
400 to 500 grams Mince Beef
Tomato Puree
Fresh Coriander


Grind cumin seeds and coriander seeds
Add salt, pepper, Oxo cube and chili
Finely chop onions and fry for 5 mins
Add mince and brown
Add red wine and bring to the boil for a couple of minutes
Add tomatoes, spices & worcester sauce
Bring to the boil then simmer gently for at least an hour
Add kidney beans and simmer for a further 10 to 15 mins
Serve with rice and sprinkle with chopped coriander
