Dietary guidance: v
6-8 farm fresh tomatoes cut into bite size chunks
2 onions sliced or diced
2 peppers (red & green) sliced or diced
lotsa garlic sliced
extra virgin olive oil
s & p
place tomatoes, onion, peppers, garlic into a bowl- season with salt & pepper, add some olive oil (to your taste) sprinkle with lotsa parmesean and enjoy!
Can also personalize with capers, olives, sundried tom... etc
To sustitute for a main course toss with cooled spaghett or any other favourite pasta, serve with crusty bread.
