1 beaten egg
3 T. milk
1 c. finely crushed saltine crackers or round crackers
1 c. grated Parmesan cheese
1 tsp. dried oregano, crushed
1/2 tsp. paprika
1/8 tsp. black pepper
3 lbs. (6 pieces) boneless skinless chicken breast halves
2 T. butter or margarine, melted
1 box angel hair pasta
1 can tomato basil sauce (I use Prego Organic)
Preheat oven to 375º F. In a small bowl combine egg and milk. In a shallow dish combine crushed crackers, 1/2 c. Parmesan cheese, oregano, paprika, and pepper. Dip chicken pieces, 1 at a time, into egg mixture; then coat with crumb mixture. Set pieces on greased baking pan or sheet. Drizzle chicken with the melted butter.
Bake, uncovered, for 30 minutes. Sprinkle chicken pieces with more Parmesan cheese. Bake an additional 15 minutes.
While chicken is baking, prepare pasta and warm tomato basil sauce in small sauce pan.
To serve: Place pasta on plate, cover in tomato basil sauce, and top with a piece of chicken. Mmmmm
