Orzo and Wild Rice Salad (J. Alexander's style)

Difficulty: Easy - for beginners


2 cups cooked wild rice
3/4 cup currants
1/2 cup fresh corn, about 1 ear
1/2 cup slivered almonds
1/2 cup Italian parsley, leaves picked and chopped
1/2 cup red pepper, diced
1/2 cup yellow pepper, diced
1 1/4 cups cooked wheat berries, prepared according to package directions
1/2 cup dried cranberries
1 teaspoon sea salt
1/2 teaspoon black pepper
1/4 cup fresh basil, leaves picked and chopped
2 cups cooked orzo, prepared according to package directions
1 cup Champagne vinaigrette

For the Champagne Vinaigrette:
1/4 cup champagne vinegar
1 teaspoon Dijon mustard
1/2 teaspoon minced garlic
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon freshly cracked black pepper
2 tablespoons olive oil


Mix all ingredients in a stainless steel bowl.

Store refrigerated in an air-tight container.
