Preparation time: 15 minutes
Cooking time: 30 minutes
3 chicken breasts, no skin, no bone, cut in 2" by 4" strips
1/4 tsp. pepper
3 tbsp. oil
1 head of broccoli, broken into florettes.
1 can cream of chicken soup, condensed
1/2 c mayonnaise
1 tsp. curry powder
1 tsp. lemon juice
1 cup cheddar cheese - grated
Sprinkle chicken with pepper.
Sauté slowly over medium heat until white and opaque (about 6 minutes), drain.
Cook vegetable until tender but still crisp.
Drain and arrange on the bottom of buttered 7" casserole.
Place chicken on top.
Mix soup, mayonnaise, curry and lemon juice together and pour over chicken.
Sprinkle cheese on top and bake uncovered at 375F for 30-35 minutes.
This recipe is very adaptable, you can use a different vegetable such as asparagus, change the seasonings or flavours of soup; or try adding some buttered bread crumbs on top with sliced tomatoes and finishing it under the broiler. Yummy!
