3/4 lb lean ground beef
3/4 lb ground turkey
2 courgettes, grated
1 small celery root, peeled & grated
1 red bell pepper, seeded & chopped
1-3 jalapeno, Serrano or fresno chilis, seeded & chopped (OR 1/2 tbsp. red chili flakes)
1/4 cup fresh basil, chopped
1 1/2 tbsp. dried oregano
2 shallots, chopped
3 cloves garlic, chopped
1/2 tbsp. kosher salt
2 eggs
1 cup matzo meal
1 cup + 1/2 cup jarred marinara sauce


Heat oven to 400. Line a meat loaf pan with olive oil or cooking spray. Mix all ingredients except matzo meal and 1/2 cup marinara sauce in a large bowl by hand until well blended. Gradually mix in matzo meal with hands, 1/4 cup at a time, until well blended. Transfer mix to pan and pack down firmly to prevent air pockets from forming. Bake for 45 min. Pour remaining 1/2 cup marinara sauce over top of meat loaf and spread with knife. Bake for another 25 min. Cool slightly before slicing and serving.
