Beet Salad

Beets are a delicious and healthy vegetable. Eating beets will help boost your stamina, lower blood pressure and help fight cancer and inflammation. By roasting beets the natural occurring sugar caramelizes making them sweet and delicious.

Ingredients

4 beets, peeled and cut into 3/4-inch cubes
2-3 tablespoons olive oil
1 pinch sea salt, or to taste

Method

1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment or aluminum paper.
2. Toss the beets with olive oil, in a bowl until beets are coated
3. Arrange the pieces of beet on a baking sheet so that they don't touch. Sprinkle the beets with sea salt.
4. Roast the beets in a preheated oven until the beets are tender, 15 to 25 minutes. A fork inserted into a beet cube should come out easily.
